4 - Stocking stuffer? This is a no-brainer: Chocolate from Olive and Sinclair. You can purchase a gift card for a flight of your choosing and all of their excursions end with the traditional champagne "Balloonist Prayer" toast that dates back 100 years to the first hot air balloons in the Irish Hills.
